Ethiopia Washed Yirgacheffe Kochere is a highly-regarded and sought-after single-origin coffee known for its exceptional quality and unique flavor profile. Kochere is a small area within the well known Yirgacheffe coffee-growing region of Ethiopia. Located in the SNNPR (Southern Nations, Nationalities, and Peoples’ Region) of southern Ethiopia, Kochere is just south of the town of Yirgacheffe and is 250 miles southwest of Addis Ababa. The area contains washing stations where local farmers can bring their coffee for processing after it is harvested. The iron-rich acidic soil and high altitude of the region are ideal for growing specialty coffee and the Kochere district is known for producing some of the most lively Yirgacheffe coffees in the region.

  • Farming: Cultivated by smallholder farmers using traditional methods, often intercropping food crops alongside coffee.
Processing:
  • Washed Process: This coffee undergoes the wet processing method, where the fruit pulp is removed before drying. This process typically involves:
    • Handpicking & Sorting: Cherries are carefully selected and sorted for optimal ripeness.
    • Pulping: The outer skin is removed using a pulping machine.
    • Fermentation: Beans are fermented in water for 12-48 hours to break down the mucilage.
    • Washing: Beans are thoroughly washed to remove any remaining mucilage.
    • Drying: Beans are spread out to dry on raised beds in the sun until they reach the optimal moisture content.
