We roast our coffees based upon sight, smell and flavor. We watch our beans closely for the roast color and consistency. We know that the shade of the beans has a factor in the taste in your cup. Along the way, we like to ensure our beans pass the sniff test. As the beans roast, the scent goes from a grassy field to an amazingly fruity, herbal, chocolatey or other wonderful richness.
